Vegan Mexican Burritos

I love Mexican food and you might not realize it at first but Mexican restaurants are super easy places to go to for vegan food that can be healthy too. At Chipotle for example, I’ll get a burrito bowl with brown rice, black beans, roasted veggies, guacamole, salsa, and romaine lettuce shreds. I wanted to make my own bean and veggie mix for a burrito that you could also add to a bowl with rice. Also, the main hesitation people have for not being vegetarian/plant-based/vegan is that they won’t get enough protein. I won’t get into this too much now, since getting enough protein has never been a problem for me, but just want to add that beans and legumes are a great source of protein and fiber. I used black beans here and 1 cup has 15 grams of protein and fiber, so finding plant protein really isn’t rocket science.

Ingredients

  • 1 can of black beans

  • 2 red peppers

  • ¼ of an onion

  • Handful of baby spinach

  • ½ tablespoon olive oil

  • 2 tortillas

Instructions

  • Soak the beans in hot water while other ingredients are cooking (soaking them helps with digestion)

  • Chop of the red peppers and onions

  • Cook the red peppers, onions, and baby spinach with olive oil in a pan until slightly burnt

  • Drain the water from the pot with the beans and add them to the pan with the vegetables 

  • Stir everything together on low heat

  • Add salt and pepper

  • Enjoy with tortillas and guacamole or however you choose
