Thyme Roasted Carrots


Here's how I cooked the carrots from my last post "Plant over Processed and Food Justice." Personally I prefer my vegetables roasted and with a little spice and seasoning instead of raw, and I think most people are with me. However, I feel like cooking from scratch can sometimes be daunting, I know it was for me, but I've realized how simple it can be. You can see how short the ingredient list is, just choose a vegetable and a spice and drizzle a little olive oil and you're good to go. 


  • Carrots 

  • Olive Oil 

  • Thyme

  • Pepper


  • Cut stems, wash, and peel carrots

  • Cut in half

  • Lightly coat with olive oil

  • Sprinkle thyme and pepper

  • Cook at 350 degrees for 20 minutes
