Thin Mints

Thin mints are my favorite girl scout cookie and I never bought any this season for some reason, I think #quarantine is partially responsible but whatever. I made my own with just seven ingredients and no added sugar. When I made these and some other dessert one day and my friend actually came and got some (shoutout Katy) while we practiced #socialdistancing still of course. Since we can only leave the house now for groceries and that may not include cookies, try making these at home to pass the time even though I never know what time or day it is anymore.

Ingredients​​

  • 1/2 cup oat flour

  • 1/4 cup cacao powder

  • 1/4 cup cashew butter

  • 1/4 cup maple syrup 

  • 1 teaspoon mint extract

  • 1/4 teaspoon baking powder

  • 1 cup dark chocolate chips

Instructions​​​

  • Mix all ingredients except for chocolate chips

  • Form mix into flat cookies

  • Put parchment paper or coconut oil on a baking pan

  • Bake at 350 degrees for 10 minutes

  • Let cookies cool and cover in melted chocolate

  • Refrigerate for a couple hours
