Snickerdoodle Blondies

I realized that I've been in a baking funk because apparently the only thing I really make is peanut butter chocolate chip banana bread (or something along those lines). I decided to branch out and try making something with no bananas, peanut butter, or chocolate chips and it was tough but worth it. Also coronavirus quarantine is f*cking up my vibe and I had to make cashew flour because the grocery store is out of oat and almond flour and we're supposed to social distance so this is what it had to come to. I forgot how much I love blondies and these came out so good so give em a go. 

Ingredients​​​

  • 1 cup cashew flour

  • 1/2 cup coconut flour

  • 1/4 cup coconut sugar

  • 2 tablespoons cinnamon 

  • 3 flax eggs (1 = 1 tbs flaxseed meal + 2 tablespoons of water)

  • 1 can of coconut milk

  • 1/2 teaspoon baking powder 

Instructions

  • Ok so I'm sure you could use almond flour or oat flour but because of #quarantine I had to blend cashews to make flour and worked so I guess I can't complain

  • Make flax eggs, mix with fork, and let sit for a couple minutes until it becomes kinda jelly like (ew)

  • Combine the rest of the ingredients in a bowl

  • Line baking pan with parchment paper and place batter in

  • Top with some coconut sugar and cinnamon

  • Bake at 350 degrees for 30 minutes
