Roasted Red Pepper Cashew Hummus

I love roasted red pepper hummus but sometimes regular chickpea hummus hurts my stomach so I decided to try to make some with cashews. It turned out pretty great and only needed four main ingredients to make. The fact that I now don't have to leave my house to get my roasted red pepper hummus fix and it now tastes even better is pretty dangerous but I think I'll live. Make this hummus as fast as you'll finish it.

  • 1 cup cashews

  • 2 tablespoons olive oil

  • 3 tablespoons tahini

  • 4 - 6 roasted red pepper slices

  • Pinch of salt, pepper, roasted red pepper flakes

  • Add 1 cup of cashews and about 1/4 cup water in a bowl and heat in microwave for 30 seconds

  • Drain water and then add cashews to a food processor

  • Blend cashews and stir after stopping

  • Add in olive oil, tahini, and roasted red peppers a little bit at a time

  • Sprinkle in a little salt, pepper, and roasted red pepper flakes

  • Keep blending until thick and creamy
