Pumpkin Peanut Butter Cups

Reese’s peanut butter cups, ever heard of them? Well these are 100x better in taste, VEGAN, and made with minimal ingredients. Oh and did I mention they’re pumpkin spice too? They are addictive so don’t say I didn’t warn you. These are the perfect dessert or snack to satisfy your sweet tooth and get you in the mood for fall. Reese’s are my favorite candy, but I’d so rather make them myself and be able to put a pumpkin twist on them too. I'm obsessed with how these turned out, and I think you will be too. 

Ingredients

  • 1/4 cup pumpkin puree

  • 1/2 cup pb

  • 1/4 cup oat flour

  • 1 teaspoon pumpkin spice 

  • 1 teaspoon cinnamon 

  • 1 tablespoon maple syrup

  • 4 cups dark chocolate 

Instructions​

  • Mix all the ingredients together except for the dark chocolate

  • Line a cupcake pan with cupcake tins

  • Take pieces of the peanut butter filling, roll into ball, and flatten so that it can fit into the cupcake tin

  • In a bowl, melt the dark chocolate chips in the microwave 2 cups at a time

  • Pour dark chocolate chips into cupcake tin, add peanut butter mix, and then top with dark chocolate

  • Repeat this until all the peanut butter mix is used - this made 10 for me and they were thicc*

  • Refrigerate for at least an hour 

  • Try and stop yourself from eating all 10 at once ;)
