Pumpkin Chocolate Chip Blondies

Pumpkin dessert, for fall? Groundbreaking. I honestly can’t believe how good these came out on the first try.. they’re super thicc, soft, and delicious that you’d never be able to tell they’re vegan and made using clean ingredients. Not to be dramatic but I want this picture as my screensaver, like the melted chocolate and cracks in the brownie and then the chocolate and brownie bits on the knife? Like c'mon. I need to make these again and I say stop what you're doing and go buy these ingredients, mix em up, and make these asap. You won't regret it.

Ingredients

  • 1/2 cup peanut butter 

  • 1/4 cup pumpkin puree 

  • 1 1/3 cup oat flour

  • 1/4 cup maple syrup

  • 2 teaspoons pumpkin spice

  • 1 teaspoon cinnamon

  • 1 flax egg (1tbs flaxseed meal + 2.5tbs water)

  • 1/4 cup coconut butter melted

  • 1/4 cup almond milk

  • 2 tablespoons coconut sugar 

  • 1 teaspoon baking soda 

  • 1 cup dark chocolate chips

Instructions​​

  • Line brownie pan with parchment paper and spread batter

  • Sprinkle more chocolate chips on top

  • Bake for 30 minutes at 350 degrees
