Pumpkin Chocolate Chip Banana Bread Muffins

You know when you try to mix some of your favorite things, activities or people together hoping it’s going to be amazing and instead it’s just a mess? Well this is an example of when it turns out perfectly. I love pumpkin, chocolate, and bananas and these muffins hit different. I put this in the dessert category here but honestly I had them for breakfast and as a snack too so go crazy with them. The ingredients are super clean and natural so they are guilt free and you can eat three in a row like me lol.

Ingredients

  • 2 cups of almond flour

  • ½ cup pumpkin puree

  • 3 tablespoons coconut sugar

  • ½ cup monk fruit sugar

  • 2 teaspoons baking powder

  • 2 bananas 

  • 2 teaspoons pumpkin spice

  • 3 flax eggs (1 = 1 tbs flaxseed meal + 3 tbs water)

Instructions

  • Mix all the ingredients together

  • Spray a cupcake pan with coconut oil

  • Scoop the batter into the pan (filling up close to the top)

  • Bake at 350 degrees for 25 minutes
