Pesto and Kale Green Pizza

I go to Georgetown University and we have a farmer’s market on campus every Wednesday in the Fall and Spring. The stand with one of the longest lines and one of my personal favorites is Timber Pizza. I always get half tomato and cheese and half green monster (pesto). If you’ve never heard of or seen Timber Pizza just know that these are full sized pizzas yet everyone eats the whole thing because they’re just that good. I had the green monster style Timber Pizza in mind when making this and I think I did a pretty damn good job. You can swap out any crust if you want I just thought I would go all in with the green you know? So get your kale and broccoli crust, vegan pesto, vegan mozzarella, and green veggies and go.

  • 1 kale and broccoli Trader Joe’s pizza crust

  • 1 tablespoon of Trader Joe’s Vegan Pesto

  • Handful of kale

  • Handful of baby spinach

  • ⅓ of a zucchini sliced and halved

  • Handful of Trader Joe’s Vegan mozzarella shreds

  • Cook the pizza crust for 10 minutes on one side and then flip and cook for another 10 minutes at 450 degrees (instructions on box)

  • Spread the pesto evenly on the cooked crust

  • Add all the other toppings

  • Cook in the oven for another 8 minutes
