Pesto and Greens Cauliflower Gnocchi

The Trader Joe’s vegan pesto is my crack. It literally makes any meal better. But this time I somehow made it even better. Big claim I know. But I realized that something I loved about gnocchi was how creamy the sauce was, and then it hit me - mix it with coconut cream. It’s the little things in life ok... Also, can we talk about how freaking good the cauliflower gnocchi is? Cauliflower had the biggest glow up of 2019. It used to be flavorless white broccoli and now it comes as chips, rice, gnocchi, anything and everything. Cauliflower is the chameleon of foods and I am here for it. Cook up some zucchini, kale, baby spinach, add it in with the gnocchi and pesto and you won’t even realize you’re eating a healthy vegetable filled vegan meal.

Ingredients

  • 1 cup of Trader Joe’s cauliflower gnocchi

  • 2 tablespoons Trader Joe’s vegan pesto

  • 2 tablespoons coconut cream

  • ½ a zucchini

  • 2 big handfuls of kale

Instructions

  • Follow the instructions on the cauliflower gnocchi packaging (I only used 1 tablespoon of olive oil)

  • In another pan cook the pesto and coconut cream together to make a creamy sauce

  • In another pan cook the sliced zucchini and kale with water until browned

  • Mix everything together in one pan so everything gets the delicious pesto and enjoy
