Peanut Butter Cinnamon Banana Bread

I've never been so proud of a recipe. This is literally the greatest thing I have ever made. I ate the whole thing within 24 hours (made it at night - ate some then, ate some more the next morning and during the day - sorry bout it). If there is one recipe you will make from my website let it be this. I can't emphasize enough how delicious this is. I had the idea for this in my head and finally decided to try it and thank God I did because wow. Also, I wanted to add that the peanut butter I use is the best (I'll fight someone on this) and is the 365 Organic Creamy Peanut Butter Spread from Whole Foods (has a red lid). Updated this a little after I made it again because apparently even the best can improve.

Ingredients

Bread

  • 2 ripe bananas

  • 2 flax eggs (1 = 1 tbs flaxseed meal + 2.5 tbs water)

  • 2 cups almond flour

  • 1/4 cup peanut butter

  • 1 tablespoon cinnamon

  • 1/4 tablespoons coconut sugar

  • 2 teaspoons baking powder

Peanut Butter Cinnamon Mix

  • 1/2 cup peanut butter

  • 1/4 cup coconut sugar

  • 1 tablespoon cinnamon

Instructions

  • Mix all the ingredients for the bread together 

  • Spray a baking pan with coconut oil

  • Mix the ingredients for the peanut butter cinnamon mix

  • Take small pieces of the pb cinnamon mix and mix some into the bread mix

  • Pour half of the bread mix into the pan

  • Take more pieces of the pb cinnamon and top the batter in the pan

  • Pour the other half of the batter on top and then top it with pieces of the rest of the pb cinnamon

  • Bake at 350 degrees for 45 minutes

The image to the left is the peanut butter cinnamon mix. I mixed some pieces into the batter and then decided to use it as a filling and topping for the bread. 

Warning: this is insanely addictive so try not to eat it all before putting it into the batter for baking.
