Peach Cinnamon Oatmeal Bake

Make this vegan and refined sugar free summer dessert while peaches are still in season because you’re going to want to try this. Like overnight oats but warm and like oatmeal but cake so it’s the best of both worlds. Make it cinnamon and peaches and we have a real winner. The oatmeal bake is the perfect texture and complimented so well by the mashed peaches in the bake and the peach slices on top. The cinnamon and agave add to the sweetness already there by the peaches. I'm drooling writing this right now so go get on this recipe.


  • 2 cups rolled oats

  • 1 cup almond milk

  • 1/4 cup agave

  • 1 tablespoon vanilla extract

  • 2 tablespoons coconut oil

  • 1 tablespoon cinnamon

  • 1/3 cup halved pecans

  • 2 mashed peaches

  • 1 sliced peach


  • Cut your pecans in half

  • Mash 2 peaches

  • Mix all ingredients together in a bowl

  • Spray a pan with coconut oil and pour the mix in

  • Top the mix with sliced peaches

  • Bake for 40 minutes at 350 degrees
