Matcha and Vanilla Protein Pancakes
I’ve tried to get on the matcha latte train but I honestly just don’t like it. There I said it. Maybe I’ll be basic eventually and go to Cha Cha Matcha in New York or LA eventually, but for now it just isn’t for me. However… since I know it has a lot of health benefits, I wanted to try and incorporate in ways I couldn’t taste the matcha, or at least mask the flavor (iykyk). Additionally I love Fit With Cambrie’s protein powders and so I thought I’d combine the two for some energy and protein pancakes. Now that you know I’m honest about my matcha latte dislike, I hope you trust me when I say that these are actually really good. I was worried they would be too bitter but there’s nothing a little cinnamon can’t fix (and agave... agave is a must for this).
If you don’t have Fit With Cambrie’s protein powder I would recommend you look into trying it because it is so clean and vegan, but you could swapping it for another protein powder. If you want to eliminate the protein powder altogether I would suggest adding a little more oat flour and then adding a tablespoon of vanilla extract. I haven’t tried this but that’s what I would do if I was.
Ingredients

1 cup gluten free oat flour

1 tablespoon matcha powder

1 scoop of Fit With Cambrie vanilla protein powder

1 cup coconut milk

1 teaspoon cinnamon

1 flax egg (1 = 1 tbs flaxseed meal + 3 tbs water)
Instructions

I didn’t already have gluten free oat flour so I blended 1 cup of gluten free oats in a blender until it had the consistency of flour

Mix all the ingredients together

Spray a pan with coconut oil

Cook the pancake batter until golden brown and flip

Top with agave, coconut flakes, and cinnamon
