Easy Pesto Zoodles


Easiest and quickest college meal. Literally all you need is a veggie noodle (I used zucchini) and Trader Joe's vegan cashew pesto (I'm fully addicted, just look at my bio). No microwave required just a bowl and fork. I then topped it with hemp seeds, grape tomatoes, and pink radishes to make it feel like more of a full meal (the tomatoes really hit with the pesto) but if you don’t have access to that you can definitely still do this. Important to note that you’ll probably need to eat a larger quantity of veggie noodles than a wheat or legume pasta in order to feel full. I ate the full container of zoodles not just what is pictured in the bowl, so don’t limit yourself or try adding it with a protein. What I do love about this is that it doesn’t require any prep and if you don’t have space or containers for leftovers it isn’t necessary.


  • Zucchini noodles

  • Vegan Pesto

  • Hemp seeds

  • Cherry tomatoes

  • Pink Radish


  • Stir in pesto with zucchini noodles

  • Cut up vegetables of your choice (I used tomatoes and radishes)

  • Sprinkle hemp seeds on top
