Double Chocolate Pumpkin Cookies

I know Thanksgiving is over and everyone is in Holiday/Christmas mode, so these are a little off season but they're so good I thought it was worth the risk. Double the chocolate, double the deliciousness with a little kick from the pumpkin. They're super simple to make and the recipe should be easy to remember since for somehow I ended up using "1/4 cup" of almost every ingredient, which kinda weirds me out but whatever. The consistency of the cookies came out really soft and chewy (see below for proof because pic or it didn't happen right?) so you're not gonnna want to miss these.

Ingredients

  • 1 1/4 cup almond flour

  • 1/4 cup pumpkin puree

  • 1/4 cup cacao powder

  • 1/4 cup monk fruit sugar

  • 1/4 cup coconut butter

  • 1/4 cup maple syrup

  • 2 teaspoons pumpkin spice

  • 1/4 cup dark chocolate chips

Instructions

  • Mix all the ingredients together and bake at 350 degrees for 15 minutes! 

  • Sprinkle more pumpkin spice on top of the freshly baked cookies and enjoy!
