Creamy Avocado Truffle Linguini

Decided to combine some of my favorites again like I did with the grilled cheese, but this time pasta. This reminds me of fettuccini alfredo because the avocado makes the sauce super creamy. I love this sauce because it's like a creamy pesto with a hint of truffle. I wanted to mix the sauce with linguini, but you can use any pasta or maybe put it on toast idk be creative and go crazy. Also, again serious plug on the nutritional yeast when making pasta (unfortunately I didn't have anymore of the Miyoko's vegan mozzarella).

Ingredients

Sauce

  • 2 cups basil

  • Handful baby spinach

  • 1/4 cup hemp seeds

  • 1/3 cup olive oil

  • 1/4 an avocado

  • 1/2 tablespoon truffle oil

Other

  • Plant-based linguini

  • A couple handfuls of baby spinach

  • Nutritional yeast

  • Salt and pepper

Instructions

  • Put all the ingredients for the sauce in a blender at high speed

  • Follow directions on box for pasta

  • Cook baby spinach in another pan with water

  • Strain pasta

  • Add a couple spoonfuls of sauce, baby spinach, nutritional yeast, salt and pepper to pasta and mix
