I got this recipe from Kenzie Burke (check her out!!), so I am not trying to take credit for it at all, I just wanted to share it on here because it’s delicious and people need to know about it. I was worried these wouldn’t turn out good because it looked so weird when I prepped it the night before (you’ll see the picture), but it actually turned out amazing. When I was cooking them on the pan the next morning they smelled like monkey bread, which I knew was a good sign. If you don’t know what monkey bread is it is basically pull apart bundt cake shaped cinnamon roll heaven (thinking of making a vegan recipe of it because it’s so good). This tasted great with agave, banana, and cinnamon, so I would definitely recommend topping it with that!
Ingredients
-
2 pieces of bread (I used Food For Life flax bread)
-
1/2 cup of coconut cream
-
1 tablespoon of coconut butter
-
Cinnamon
-
1/3 banana
-
Agave
Instructions
-
Place 2 pieces of bread on a plate and pour coconut cream over it so that both pieces of bread are covered and will soak it up
-
Sprinkle a lot of cinnamon on top
-
Leave this concoction in the fridge overnight
-
The next morning put the coconut butter on a pan and place each piece of bread on the pan to cook
-
Flip each piece until each side is golden brown but still soft
-
Top with banana, cinnamon, coconut shreds, and agave
