Cinnamon Cashew Butter Cups

If you look not to far on my feed you'll quickly be able to tell I'm obsessed with make nut butter cups. This was my first time trying and using cashew butter (peanut butter has my heart) and they turned out better than I could have ever imagined. They are like cinnamon buns covered in chocolate but its actually a cashew butter cup that is vegan and made with no added sugar and only five ingredients. They're so much better than store but nut butter cups because you actually know what's in them and you get the bragging rights of having made something this delicious yourself. 

Ingredients

  • 1 cup oat flour

  • 1/2 cashew butter

  • 1/3 cup maple syrup

  • 2 tablespoons cinnamon 

  • 4 cups dark chocolate chips

Instructions

  • Mix all ingredients except chocolate chips together in a bowl

  • Melt chocolate chips 1 cup at a time for 1 minute, stirring after 30 seconds

  • Line cupcake pan with tins and pour chocolate in to cups

  • Roll cashew butter mix into balls and flatten to fit into cupcake tins

  • Pour chocolate over to finish

  • Refrigerate for at least an hour
