Chocolate Peppermint Cups

Christmas dessert is officially here. I had the idea to make these over a month ago, but wasn't home for Thanksgiving break, so obviously I made these my first day back even when I have to more papers to write. Priorities. I love chocolate peppermint desserts like I am actually obsessed with the seasonal Barkthins, so I wanted to make my own healthier version of peppermint patties. With just 6 ingredients you can have six thicc as hell vegan peppermint cups too.

Ingredients​

  • 1/2 cup coconut shavings

  • 2 tablespoons coconut flour

  • 1/3 cup coconut butter (melted)

  • 2 teaspoons peppermint extract

  • 3 tablespoons maple syrup

  • 3 cups dark chocolate chips

Instructions​​​

  • Mix together all ingredients except chocolate chips

  • In a separate bowl melt 1 cup of dark chocolate chips in a microwave, stirring 3 times every 30 seconds

  • Line a cupcake tin (I wanted them thick so I made 6 but you can definitely make more smaller ones)

  • Pour chocolate into tin for the base, add peppermint patty, and then cover with more chocolate - repeating until all is used

  • Refrigerate for 4 hours and dig in
