Cauliflower Rice Veggie Stir Fry

This meal was so easy to make that I decided to make it the first of a simple college meals series. My dining hall is gross and I usually just buy meals, but I want to try to cook more this semester (even if it has to be in the common room). For this I just bought a box of cauliflower rice and a box of pre-cut mixed vegetables from Whole Foods. I wanted it warm and a little roasted so I cooked it on a pan in a little water and then later added coconut aminos (tastes like soy sauce but is a healthier alternative). The box of cauliflower rice and vegetables were both pretty big so this would last you a few days, making it when you want or all at once to have leftovers.

Cauliflower rice

Veggie mix

Coconut aminos

Salt and pepper

Instructions​​​

Start cooking cauliflower rice on a pan with some water

Add vegetables - I bought a mix of already cut ones at Whole Foods

Once the rice and vegetables begin to get roasted add a tablespoon or two of coconut aminos and stir into

Top with salt and pepper
