Blueberry Lemon Bread

Now that it's officially spring and cherry blossom trees are blooming in my neighborhood I wanted to make something kind of fruity and I went with blueberry and lemon. This bread is sweet, refreshing, and light and so good I made it twice in one week. I've been doing so much baking during this self quarantine time, so although I am going crazy I guess all the recipes I'm trying and desserts I'm eating is a bright side. Keeping it short and sweet like this recipe, let me know if you try it!
Ingredients​​​​​

2 cups oat flour

1/2 cup vegan yogurt

1/4 cup monk fruit sugar

1/4 cup maple syrup

2 tablespoons coconut flour

2 tablespoon oat milk

1 teaspoon baking powder

1 cup of blueberries
-
Juice of 1 lemon

Mix all ingredients in a bowl

Fold in blueberries
-
Bake at 350 degrees for 50 minutes
