Bircher Muesli - aka Apple Overnight Oats 2.0

I ate bircher muesli for the first time in Nice, France this summer for breakfast and didn’t really know what it was but was hooked. It was sweeter than overnight oats, but had a similar consistency. I decided to try it for myself and discovered the secret is apples. This recipe is the perfect way to spice up your oatmeal and breakfast routine for fall. Also fyi this recipe makes A LOT so you'll be set for a quick breakfast or snack for days, but if you don’t want a lot of leftovers cut it down proportionally. 

Ingredients

  • 2 cups rolled oats

  • 1/2 cup of oat milk

  • 1 cup plant based yogurt

  • 1 tablespoon cinnamon 

  • 1 apple

  • 1 tablespoon chia seeds

  • 1 tablespoon flax seeds

  • 1 tablespoon pumpkin seeds

Instructions

  • Blend your apple in a food processor 

  • Mix all the ingredients together in a bowl (only 1 cup of oat milk though)

  • Place into a container to leave in the fridge overnight

  • The next morning, add a 1/2 cup of oat milk and stir

  • Place desired amount into a bowl and top with favorite fruit, granola, seed, etc and enjoy!
