Apple Peanut Butter Crumble Muffins

These are perfect for breakfast, snack, or dessert and are dangerously delicious - ask my friend who ate four in a row... but since they are made with clean and minimal ingredients who cares. I was surprised they came out this well honestly because I was sort of following one of my other recipes and I had put baking soda in that one and forgot to in this one but it turned out it didn’t need it so yay on that. These are super quick and easy to make so go get your fall on and try out this recipe. 

Ingredients

Cake

  • 2 cups almond flour

  • 1/2 cup pb

  • 1 cup apple

  • 1/4 cup coconut sugar

  • 2 tablespoon cinnamon 

  • 3 flax eggs (1= 1tbs flaxseed meal + 2.5 tbs water)

Crumble

  • 1/3 cup pb

  • 3 tablespoons coconut sugar

  • 1 tablespoon cinnamon

Instructions​​​

  • Peel and cut the apple and then put it into a food processor until well blended

  • Mix all the cake ingredients together in one bowl

  • Mix all the crumble ingredients together in another bowl

  • Spray a cupcake pan with coconut oil

  • Scoop cake mix into pan (made 9 for me)

  • Make small pieces with the crumble mix and top each cupcake until all the crumble mix is used

  • Bake at 350 degrees for 25 minutes
